New Summer Flavour – The “Eatin’ Mess”
I picked up the most delicious, juicy, bright red strawberries at the organic market this weekend. After a week in London and loving all things English, including Wimbledon, I used a quintessential English dessert to inspire my new cupcakes. What happens when the Eton Mess meets Nomzilla? You get: Eatin’ Mess! It’s a vanilla bean cupcake topped with fresh vanilla-infused whipped cream, studded with fresh berries and a homemade raspberry coulis PLUS fresh-baked crushed meringues. YUM.
New Flavour! Meet the Drunk & Salty
I recently attended one of Edible Europe’s Ghetto-gether’s hosted by The Kitchen here in Amsterdam. It’s basically a monthly (kind of) potluck of like-minded foodies in the city, and the host changes each time. And it’s awesome. The theme of the last one was “Bring your Sunday Best”. Lately, my Sunday best has been trying out new cupcake recipes. I’ve been dying to make some salted caramel and thought “why not make it a cupcake!” So here is the newest Nomzilla flavour.
Meet the Drunk & Salty:
It’s a classic Chocoholic with a warm oaky Bourbon undertone. The buttercream…oh my god. It’s damn good. A ultra-smooth salted caramel buttercream dotted with flecks of vanilla seeds. Sprinkled with a few crystals of Maldon’s sea salt and a chocolate curl. DROOOOOOOOL.

Mini Wedding Cupcakes
I was super thrilled to cater 200 mini cupcakes for a wedding for two lovely gentleman a couple weeks ago. They came over for a tasting and wanted all the flavours I made for them: Lemon Bombs, Peach and Blackberry Thyme, Lemon Raspberry and Chocoholic Strawberry.
They’ve emailed me a photo of the cupcakes being served. Thanks Stefan and Matthew and congratulations!
New Spring Flavours!
How awesome has the weather been this spring? You can see the result of this in the produce at your local market. Everything seems to to be coming up much earlier. To celebrate, I’ve added a couple new (seasonal) flavours to the Nomzilla repetoire.

Gin & Tonic Cupcake
One of my favourite summer cocktails, okay, let’s face it, an all-year-long cocktail is the gin and tonic. So, I made it into a cupcake:
A moist gin-infused cupcake, drizzled with a lime-infused gin reduction, topped with a tonic and lime cream cheese frosting. Topped with a curl of fresh lime peel, of course.
It’s Royal Wedding Day!
Well done to all my friends across the pond who get to enjoy the day off today to watch Prince William and Kate Middleton get hitched. Unfortunately, the Brits here have to work. But that’s okay, ’cause cupcakes reign supreme!
It was painstaking work cutting out teeny tiny bits of marzipan for the Union Jacks.
